Easy, delicious Pepper-Lime Chicken

1 TBS finely shredded lime peel
1/4 cup lime juice
1 TBS cooking oil
2 cloves garlic, minced
1 teaspoon dried thyme or basil, crushed
1 teaspoon black pepper
